Recipe: Chicken Schnitzel

I was sent the Oktoberfest flavor kit to try from RawSpiceBar, a monthly subscription service that sends high quality whole ingredient spice his . The kit included 3 easy to follow recipe cards: Horseradish & Mustard Cabbage, Caraway Cheese Soft Pretzels and German Chicken Schnitzel and 3 sachets of 100% Pure Spices: Horseradish & Mustard Seeds; Caraway, Fennel and Anise Bread and Schnitzel spices. Although I am excited to (and will eventually) try all of them, I was most intrigued by the chicken schnitzel recipe. The ingredients were simple and I had most of everything I needed in my pantry.

German Chicken Schnitzel (from


RawSpiceBar’s Schnitzel Spices
2 boneless chicken breasts halves
6 tbsp butter
2 cups breadcrumbs
3 tsp kosher salt
1/2 cup all purpose flour
1 egg



  1. Butterfly chicken breast and pound out the thickness of the butterflied breasts so that no parts of the breast are thicker than 1/4 inch.
  2. Combine flour, salt and RawSpiceBar’s Schnitzel Spices in a wide bowl. Set breadcrumbs in separate plate. Whisk egg and add to separate bowl.
  3. Place each piece of chicken in the flour mixture, coating both sides, and shaking off any excess. Next, dunk the chicken into the eggs, draining excess liquid, then coat liberally with breadcrumbs until covered on all sides.
  4. Place large skillet over medium high heat and add butter. Once butter is melted, add one piece of chicken and let cook for 3-4 minutes until golden brown. Flip and cook other side to golden brown.
  5. Repeat with remaining chicken. Serve hot out of the pan and enjoy!



I thoroughly enjoyed this recipe. I wasn’t expecting it to be as flavorful as it was. I modified the recipe slightly using my own homemade breadcrumbs as I had none available and baking it in the oven, as I had no skillet. It was a hit with my children who requested seconds.

Notara Dance Theatre Presents 31st Annual Nutcracker Ballet

The Notara Dance Theatre presents the 2014 Nutcracker Ballet.  The show, in its 31st year, features a group of professional ballet artists from New York City and more than 75 dancers from the local community. This classical ballet has something for everyone.  Tchaikovsky’s familiar holiday music will transport the audience to a magical land where everything is sweet, with the exception of the swashbuckling sword fight between the Mouse King and the Nutcracker.  Impressive technical elements such as a Christmas tree that grows from 10 feet to 25 feet tall, expert lighting and special effects, and softly falling snow add to the allure of the ballet.

The exquisite Balanchine-style choreography, the professional dancers, and the local ballerinas directed by American Ballet Theater certified teacher, Mrs. Sally Notara, are what make this Nutcracker Ballet truly sparkle.  From the reality of the glittering lights on the Christmas tree in the Stahlbaum’s parlor to the fantasy of the crystals on the tiara of the Sugar Plum Fairy in the Land of Sweets, this is one show that you will not want to miss.  As the performance comes to an end, the Sugar Plum Fairy closes the book of dreams, and opens your heart to the magic of the holiday season.

Main Street Art Project by Sherman Theater (Kickstarter)

A new kickstarter project in collaboration with the Sherman Theater, has been recently launched to support the creation of a community based mural wall.

A community based mural wall, created with eighteen 4 foot by 8 foot panels on the Main Street of a beautiful downtown area in the Pocono Mountains in Pennsylvania. The wall will be constructed to hide an empty lot in the center of our town. The Lot was created when a devastating fire took three of our historic buildings in the center of town. The property has not been able to be redeveloped as of yet and leaves a huge hole with a chain link fence. Stroudsburg, as a community has been working extremely hard beutifying the streets, attracting great businesses and creating a wonderful community vibe with arts, antiques and music events, all supplemented by amazing restaurants, specialty stores and recreational activities.

With Downtown Stroudsburg becoming a burgeoning and thriving art hub, all money raised in this project will help to ‘community pride and economic development and serve a s the catalyst for a renaissance in community pride and prosperity.’

Can Kmart’s ‘What a Doll’ apparel fit ‘American Girl’ Dolls?

My daughter’s dream came true when she was given an American Girl last Christmas. For those who have no idea what American Girl is, it’s a line of 18-inch dolls portraying ‘eight– to eleven–year–old girls of a variety of ethnicities’. The dolls are sold with accompanying books, clothing and accessories.

3426643200_478df656a8_bUpon research, I found out that each doll costs a whooping $110, with a full dolls outfit costing from $28 dollars. They also sell matching girls clothing for around $50. which to me seems a lot. I really couldn’t fathom spending a lot of money on a selection of dress up outfits for the doll.

Earlier this year, I stumbled upon ‘What a Doll’ a doll line which is almost identical to the American Girl range. Only difference is the affordable price tag. I wasn’t sure whether the clothes fit. The doll and girl outfits were on sale so I decided to pick up two sets (each set consists of a dolls outfit and a matching girls outfit) for $12 each.


Here’s what I picked up.

The last time I check both items mentioned are sold out but Kmart continues to sell new sets every season costing around $19 each. From time to time they have a sale online.

5 useful ways to help deal with anxiety

Everybody has moments in life when they are inundated with stressful situations. Dealing with some of the pressures that life throws at us can sometimes be overwhelming for many of us. Luckily there are method that can help ease the stress. We have put together a list of 5 useful ways to help cope with anxiety:

  1. Relax. Most would assume that sitting back and watching a movie or playing solitaire on the computer are relaxing but these are temporary solutions. What the body needs is a relaxation technique — like meditation, deep breathing, tai chi, or yoga — something that has a physical effect on the mind. Deep breathing exercises helps to relax the major nerve that runs from the diaphragm to the brain, sending a message to the entire body to let go and loosen up.
  2. Sleeping, Eating Right, and Exercise. For a peaceful mind and body, make sure you get the right amount of sleep (minimum of 8 hours). Eat well: Choose fruit, vegetables, lean proteins, and whole grains for long-term energy. Exercise sends oxygen to every cell in the body so your brain and body can operate at their best.
  3. Connect with others. Spending time with friends or family is a great way to take your mind off of your troubles. Plan a family trip – doing things with those we feel close to strengthens bonds while allowing us to feel supported and safe. Talking to loved ones also reminds us that everyone has these feelings sometimes. You are not alone.
  4. Connect with nature. As well as offering health benefits of exercise, taking the dog for a walk or talking a short stroll around the neighborhood can help anyone feel peaceful and grounded. Invite a friend or family enjoy feeling connected to people while your at it.
  5. Think positive. Keeping optimistic and thinking positive thoughts can help get our minds off the worry track.

New Family Restaurant Hosting 3 Days of Giveaways this Thursday to Saturday

Dickey’s, a new family barbecue restaurant will open in Stroudsburg this Thursday. The first 50 dine-in customers who purchase an item on opening day will be given a Dickey’s gift card fully loaded with up to $50.

And the giveaways doesn’t stop there. Friday will be a day of giveaways and specials, and  on Saturday, Dickey’s will be selling their famous Pulled Pork Big Barbecue sandwiches at $2 from noon to 2.00pm. A drawing for a $500 Dickey’s gift card will take place on Saturday.

Year round deals include Kids eating free on Sundays and a free ice cream for every customer that purchases a meal.

Owner Keith Lynch states “The Stroudsburg area is full of huge barbecue fans and the local market has very few options for fast, fresh, authentic barbecue — Dickey’s is going to be very popular here in the Poconos.”.
