Adding oatmeal to cake mix gives the finished cake, a moist and airy texture. This delicious vegan oatmeal and apple cake is so delicious that it’s a perfect snack to eat anytime of the day.
1½ cups hot water
1 cup old fashioned oatmeal
1½ cup brown sugar
½ cup coconut oil, at room temperature
2/3 cup Apple Sauce
1⅓ cups all-purpose flour
1 teaspoon cinnamon
1 teaspoon baking powder
½ teaspoon salt
1 apple chopped into small cubes (optional)
Preheat the oven to 350°F. Spray a 9×13-inch baking dish with nonstick cooking spray.
Combine water and the oatmeal and allow to soak while the remaining ingredients are prepared.
Cream together the butter and brown sugar. Add in the apple sauce.
In another bowl, mix the flour, cinnamon, baking powder and salt together. Add half of the flour mixture to the creamed butter and sugar, followed by the soaked oatmeal, then the remaining flour, making sure to mix after each addition.
Pour mixture into the prepared baking dish and bake for 35-40 minutes or until set.
